Going to the Catskills next week, should I take my MTB?

Elm Ridge is what you seek i think. Right near Windham Mtn (which also has a bike park). http://www.fatsinthecats.com/ Platty doesn't run the lift anymore but i bet they'd let you ride up, though trails will likely be unkempt. Good area for road/gravel riding if you're into that too.

The Plattekill mountain is nearby which used to be a top DH spot, but I don't think they have this anymore.

Does anyone know any rideable trails in the area?

Elm ridge is awesome, I would highly recommend it. It looks like its a 45 min ride from your spot, well worth that drive!
 
yes this. RIP wilderness roll, 27 large tabletops in a row twisting down the mountain. Its a real loss.
The past 2 summers we spent a week up there riding Windham and Elm, so much fun and memories. Really good eats in and around Windham too. We skipped Windham this past summer to go elsewhere but looks like we may not be able to return in the future. HArd to believe they would just decomission the bike park--so much work and history there between the jump line and the UCI DH course. On the other hand, there never seems to be a ton of people be it weekend or weekday so you wonder the viability of it. The mountain seemed severely underutilized though with all the elevation and acerage they have available. The green trail could totally be transformed into something actually usable--i mean, if i want to pedal i *down* a mountain, i wouldn't have bought a lift ticket to begin with! lol
 
Yep Round Top (pic) or Elm Ridge. You can also try Onteora Lake or Jockey Hill which are further south.
