Anything below 40 and my feet freeze within 30 mins. Since picking up my shimano winter shoes (spd), I have been able to extend that to about an hour. I wear neoprene socks over wool socks from Fall to Spring. I want to fatbike in the snow and ride the winter using flat pedals. I find the hell cats to be responsible water resistant, they are not water proof by any means but if it is that wet I am typically not on the trails. I wear my down to around 30 with a woolie bookie before thinking about my winter boots . The impacts (or whatever replaced them) would likely add alittle more protection.

My recommendation would be is that you just stick with the SPD‘s since you already have a winter shoe, I know you want to be on flats but at the end of the day if we’re talking about a half an hour or an hour ride… Let’s be honest how rad are you going to get on the fat bike where you would really see the advantage of flat pedal shoes
This is what I do, I dress so I'm a little chili in the lot. In 15 mins I'm nice and warm.I‘m a heavy sweater. When riding sub-freezing temps, I just need to decide whether I want to be cold at the very beginning of the ride or too hot for the rest of it. I don’t mind suffering a bit at the very start if I can avoid becoming a sweaty mess by the mid point. So, my gear is essentially just what I wear in the summer plus a full face, thin jacket with zip-off sleeves and winter gloves.
After 30 minutes, I’ll switch to my summer gloves and zip off the sleeves of the jacket so it's essentially a vest. The full face keeps my ears warm but vents enough to keep my noggin cool.
There is no silver bullet here In terms of a single piece that has merino plus wind stopper plus the zipper features.My Gore Tool jacket is reaching the end of its lifespan. Anyone have any suggestions for replacements.
I like the wind stopper and relative loose fit of the jacket, as well as it’s ability to unzip underarm panels for venting. I don’t like that it absorbs odors, something merino wool based would be great.
